Mushrooms

Mushrooms are a frequent companion to my meals, particulary in autumn when you get a nice range of different varieties at the market. I like them most when cooked soft but with a little bite remaining - I find this is how they develop the best and strongest aroma. Even if I use them for salads I never add them raw (I find them rather insipid then) but grill them for only a few moments so their flavour can expand.
