Chicken Breast Filets
I quite like using chicken breast filets to experiment with a variety of sauces and spices. Having a comparatively weak natural taste they perfectly qualify as "guinea pigs" for new flavours.
Although it does not have a very strong inherent taste the chicken breast does by no means need to be bland and dry. Since trying organic chicken from a local specialty butcher I have refused to ever buy chicken breast filets in the supermarket again - the taste is completely different, very fine and juicy.
I mostly use the filets for rather light meals, which I often prepare spontaneousely. I always keep some in the freezer; if you freeze them right after buying them they are perfectly fresh after defrosting.
