Aubergines
Aubergines - when of good quality - are a hot candidate to be my favourite vegetables. I like them in all kinds of different ways - for example as an ingredient for pan-fried dishes or sauces, thinly sliced and marinated, or simply grilled with a dip. As with many vegetables I find it particularly important to buy good quality products (otherwise they taste just completely bland), and not to overcook them in order to fully enjoy their aroma.
